Sweet potato brownies

1 Tbsp coconut oil plu extra for greasing
300g sweet potato - peeled and diced
1 tsp ground cinnamon
2 heaped Tbsp unsweetened cocoa powder plus extra for dusting ( optional)
A pinch of salt
60ml boiling water
2 med free range eggs
2 tsp vanilla extract
1 Tbsp clear runny honey
120g ground almonds ( optional )

Preheat oven at 200c / gas 6
Put 1 Tbsp of coconut oil in a non stick roasting tin and place in oven for 2 mins until melted.
Tip the sweet potato and cinnamon and coat mixture well with the hot oil.
Bake for about 15 - 20 mins until just tender.
Scrape the sweet potato mixture into a bowl and use a stick blender and blitz into a purée.
Set aside to cool slightly.
Reduce oven temp to 170 c / gas 3
In another bowl put the unsweetened cocoa powder and salt with the boiling water and mix to
form a paste. Set aside to cool.
Crack the eggs in a bowl and add the vanilla extract and honey and whisk until pale in colour.
Add ground almonds ( if using)  to the cocoa paste, add the egg mixture and sweet potato purée
to the cocoa mixture and combine well.
Lightly grease a baking tin about ( 13 x 18cm or 15cm square). Tip mixture into the tin and bake
for about 20 mins.
Remove and leave to cool before adding the extra cocoa powder and cutting.

This recipe freezes very well.
made these and they are delicious!!

Now you are talking ray I've just bought some malteser buttons .they are nice love chocolate cake drop of booze of choic e n ice.cream.
