Me too. I'm looking forward to some new ideas. We end up eating the same things all the time.

I've been lazy, buying those bags where you bung the meat & veg in and let it cook inside the bag. The Mediterranean  chicken one is nice colmans  are the make.

Chicken & Leek soup

1 onion - finely chopped
1 garlic clove - minced
2 leeks - thinly sliced
3 pieces of bacon - chopped
1 tsp wholegrain mustard
2 tsp mixed herbs
6 cups of chicken broth
1 cup of coconut milk
1 Tbsp fish sauce
Squeeze of half a lemon
Salt & Pepper
Spray oil

Use either cooked chicken or raw chicken cooked
Spray a large saucepan with oil, add onion and bacon and cook till golden.
Add garlic and leeks and continue to fry until softened.
Add mustards and herbs, lemon, broth and fish sauce.
Bring to the boil, then reduce heat and simmer for 40 mins
For the last 10 mins add chicken that has been cooked and coconut milk
Season with salt and pepper.

Beef shallot & sweet potato curry.

800g of rump beef cut into cubes
3 Tbsps of sesame oil
3 Tbsp coconut oil
1 large sweet potato peeled & cubed
16 shallots peeled and left whole
4 cloves of garlic crushed
1Tbsp of fresh ginger grated
1 red chilli seeded and chopped
2 tsp of turmeric powder
2 tsp ground cinnamon
1/2 cinnamon stick
1Tbsp curry powder
1/2 tsp Black Pepper
4 lemon rind strips
250ml thick coconut milk
125ml beef stock
1 tsp sugar
Salt to taste

Add the coconut oil to pan and seal the meat in batches.
Remove meat from the pan and keep warm
Add the sesame oil and shallots and sauté for 2-3 mins then add sweet potato garlic ginger turmeric
Curry powder chilli ground cinnamon and cinnamon stick and black pepper and cook for 2-3 mins
making sure the spices are cooked and sizzling.
Add the beef lemon rind coconut milk and stock. Season well with salt and the sugar.
Cover the pan and simmer for 1 hr.
Serve with steamed Thai rice.

Parmesan Turkey meatloaf.

500g of Turkey mince
500g of pork mince
2 eggs beaten
1 cup of Italian breadcrumbs
3 Tbsp of Italian seasoning
1/4 cup of grated Parmesan cheese
1 Tbsp chopped garlic
1 Tbsp Worcestershire sauce
1 Tbsp dried parsley
Salt & pepper
1 jar of red sauce ( I use passata )
1 cup of grated mozzarella

Combine all ingredients except for sauce and mozzarella cheese, and mix well, but not to much
as the meat will become tough.
Put mixture into a loaf pan. Pour over half the sauce and cook for 30 mins uncovered on 200c 400f
Take out after 30 mins and add half the mozzarella, and add the rest of the sauce , then add remaining
Cheese. Cook for a further 15 mins. Serve with extras of your choice.

Cream cheese pizza

1 8oz pack of cream cheese
2 Eggs
1/4 cup of hard cheese ~~~ Parmesan, Pecorino, or Romano
1tsp garlic powder
1/2 tsp Black Pepper

Preheat oven to 180c
Add cream cheese to a bowl
Use a hand mixer and gently beat the cream cheese until soft
Scrape down the sides of the bowl
Add hard cheese garlic powder and black pepper and mix again until well combined
Add eggs one at a time gently mix until all is combined
Scrape down sides of the bowl
Spread batter on grease proof paper and rest on a baking tray in any shape you desire
Bake in oven for 20 mins
Take out and rest for 10 mins
Add any toppings you want and cook for 10 mins until everything is cooked through.

Cinnamon & Cardomon fat bombs

I made chocolate ones last week and they were vomit

But I will give these a go. I love both these spices.

11/2 oz unsalted butter
1/4 cup of shredded coconut
1/8 th tsp of ground Cardomon
1/4 tsp vanilla extract
1/8 th tsp ground cinnamon

Bring butter to room temperature
Dry roast shredded coconut carefully until it begins to brown.
Take out of pan and let it cool.
Mix together butter half of the roasted coconut and the spices in a bowl.
Form into walnut sized balls using 2 teaspoons
Roll the balls in the remaining coconut
Store in fridge or freezer.

Chilled Avocado & Cucumber soup

1/2 cucumber
1 ripe avocado
5 sticks of celery
3 Tbsp lemon juice
1/4 - 1/2 cup of water
1 tsp sea salt
2 oz goats cheese or cheddar grated

Blend all ingredients except the cheese on high
Serve chilled with the grated cheese on top.

This recipe serves 2

Black bean soup

2 15oz can of black beans
1 cup of water
2 Tbsp coconut oil
1/4 cup of chopped white onions
1/4 spring onions
1/4 cup chopped red pepper
1/4 cup of button mushrooms
3 minced Garlic cloves
1 tsp salt
1 tsp cumin
1 tsp chilli powder
Hot sauce to taste ( optional)

In a food processor or blender. Blend 1 can of the black beans with 1 cup of water.
In a medium saucepan add coconut oil over a medium to high heat.
Sauté onions mushrooms and garlic until tender.
Add the blended black bean mixture and stir over a slightly lower heat.
Add 2 nd can of black beans and continue cooking for 5 to 10 mins.
Add more water if it’s too thick.
Add salt cumin chilli powder and hot sauce- if using.
Serve hot.

This recipe serves 4

Tex mex casserole

11/2 IIb beef mince
51/4 oz crushed tomatoes
51/4 oz strong cheese - Monterey Jack
11/2 oz jalapeños peppers
3/4 cup of creme fraiche or soured cream
1 - 2 scallions finely chopped
3oz of leafy greens - either salad or spring greens

Taco seasoning
11/2 tsp of chilli powder
11/2 tsp of paprika
1tsp cumin
1 tsp each of garlic and onion powder
Pinch of cayenne pepper
1 tsp salt

Preheat oven to 400f/200c
Fry mince in a little butter until brown
Add taco seasoning and crushed tomatoes and mix well
Place mixture in a greased proof dish. Top with jalapeños peppers and grated cheese
Bake in oven for 15 -20 mins until golden brown on top
Chop scallions and mix with creme fraiche or soured cream.
Serve casserole with a dollop of your cream mixture and either salad or spring greens.
